Researchers have shown that sugar alters the structure of the gut flora, and supports the bacterium Akkermansia muciniphila, which breaks down proteoglycans, the main component of mucus produced by intestinal epithelial cells.
Interestingly, scientists previously believed that these bacteria have an anti-inflammatory effect, and they were even planning to use them to combat obesity and type 2 diabetes. But the results of this study showed that increasing it in the intestine causes the destruction of the protective mucous layer that lines the inner walls of the intestine, which allows other bacteria to penetrate this protective layer, causing ulcerative colitis.
The researchers point out that what confirms these results is the discovery of active enzymes that break down mucus, in patients suffering from ulcerative colitis.
